Borough Chambers is new to Port Fairy, though the building is anything but. Originally the town's civic chambers, the heritage-listed space on Bank Street has been lovingly restored to reclaim its name and, with it, a renewed sense of place.

The coffee shop opens seven days with specialty coffee from St Ali and freshly made pastries and baked goods to match. From Wednesday through Saturday the doors don't close, afternoons drifting into share plates and drinks before the kitchen takes over entirely at night, serving a rotating menu of modern Australian cooking built around local meat, fresh-caught fish and produce from nearby farms. Craft beer, specialty wines and cocktails sit alongside the food with the same care and intention.
